Tomatoes, considered a staple item in the kitchen, have been traced back the Aztecs, but likely weren’t cultivated as the TOV we know now until much later in Peru and Ecuador. TOVs found in stores now are almost strictly greenhouse grown, as the optimum environment to get the greatest production, sustainably.
Best paired with fresh cheese, basil, oregano, pasta or squash, tomatoes should be kept out of the refrigerator and direct sunlight for best taste and texture.
