2 tbspOlive oil
3Garlic cloves, minced or finely grated
½ tspKosher salt

½ tspCrushed chilli flakes, optional
500 gramsLong pasta noodles, such as spaghetti, linguini or fettuccini

Step 1

Bring a large salted pot of water to boil over high heat. Once boiling cook long noodles as per package instructions, removing ¼ cup of pasta water with 1 minute left in the cooking time. Drain and set aside.

Step 2

Meanwhile, heat a medium skillet over medium-high heat. Once hot, add olive oil, garlic, and tomatoes. Season with salt, pepper, and chilli flakes (if using). Add pasta water and bring to a strong simmer to combine flavours.

Step 3

Toss tomatoes and sauce with pasta. Serve immediately.

Serve with finely grated Parmesan cheese if desired.
